The diversity of this region, a vast "terroir" which makes
up about 40% of the French wine production, comes as much from the soils
and climates, as from the appellations (34 of them) and the varietals
used. It is thanks to the initiative of young vintners that its wines
have made great strides in terms of quality, offering more elegance and
finesse.
The wines of Languedoc are red or rosé, and come from varietals
such as the Carignan noir, Cinsault, Mourv_dre, Cournoise (AKA Aubun),
Grenaches noir and rouge, Oeillade, Syrah and Terret noir, as well as
some secondary varietals which are allowed in quantities of up to 15%.
The Roussillon in its history and climate is only slightly
different from its Spanish neighbour, except for its tiny size. It offers
Banyuls, Rivesaltes, Collioure and also Maury. These add their wonderful
amber colour to the local palette.
