The Cabardès Controlled Appellation soil stretches itself at the South of the Massif Central, on the sunny hillocks of Montagne Noire. It is composed of clay and limestone, which optimizes sun exposure and favors the expression of the aromas.
As the only appellation allying the Atlantic grape varieties finesse (Cabernet, Merlot and Malbec) and the Mediterranean grape-varieties fruitfulness (Syrah and Grenache), Cabardès offers complex and elegant wines.
In 1620, Bernard de Pennautier who was then treasurer of the Languedoc States, laid the first foundation stone of Château de Pennautier.
A few years later, his son Pierre-Louis carried on his work by hiring Le Vaux, the Versailles castle architect, and by entrusting Le Nôtre with the arrangement of the gardens.
In 1622, the young king Louis XIII came to the castle and left as a gift to his host, his travelling furniture. The Bastide Rougepeyre, which was a fortified house during the 13th century, and a forward position for the Lastours castles, was also Roger Pierre de Cabaret's residence, who indeed gave his name to the Cabardès appellation.
A worlwide expension

The Pennautier wines were served in 1701 at the Court, and since that date they've kept improving, and are now present and acknowledged worldwide. When Nicolas de Lorgeril, the ninth generation of the same lineage took over the management of the estate, he made a point in keeping the family tradition of the great origin wines alive.
The two family-owned estates are now joined within Lorgeril vineyards, present on the French market, and export to over 20 countries. Because of a long history, a real know-how, and a genuine tradition, the Lorgeril vineyards today produce and sell – thanks to a young and dynamic team – over one million bottles of Cabardès Controlled Appellations, "vins de cépages", and "vins de pays".
The family-owned estates vineyards cover 87 acres, they are pruned in espalier in order to optimize sun exposure, and the soil is cultivated and followed by a competent team of over 20 permanent people.
Wine-making, grape-variety by grape-variety, temperature control and destemming techniques, and also long vatting time and maturing in new oak barrels for some cuvées, allow the soil and the grape-variety to express all their subtlety.

Notes de dégustation : Robe très sombre, grenat foncé. Nez puissant, intense, dominé par les fruits noirs compotés. Notes de torréfaction, de havane et de cacao soutenues par un trait de poivre. Bouche ample, charnue, tanins biens mûrs, finale très longue. Belle présence en bouche. Très bon potentiel de garde.
Vinification : Vendanges manuelles sur les plus vieilles vignes de grenache et syrah. Erraflage total de la vendange. Fermentation en cuves, parcelles à parcelles. Cuvaison longue de 35 à 40 jours. Vinification classique en privilégiant le pigeage et le délestage.

Notes de dégustation : Nez puissant, complexe fruits noirs et truffe, arômes d'épices (girofle et poivre blanc). Bouche charnue et massive, tanins très fins, belle harmonie. Ce vin atteindra sa plénitude entre 5 et 8 ans. Il est préférable de la carafer avant le service.
Vinification : Vendanges manuelles. Erraflage total de la vendange en vinification classique en privilégiant les pigeages et délestages. Cuvaison de 35 à 40 jours. Fermentation malolactique en barriques de chêne français.
